Coconut cupcakes with Vanilla Frosting


Baking has always been my favourite thing to do on sunday nights, especially when I’m making something super sweet and colorful just like cupcakes. This was my first attempt at making coconut cupcakes but, I have to say, they turned out pretty good. And since I was feeling extra festive today, ( it’s getting pretty cold and rainy here in Italy and I’m sooo excited for Christmas) I’ve decided to decorate them with some colorful pralines.

Here is the recipe, I hope you enjoy!



For the cupcakes:

  • 200gr flour
  • 180 oz milk
  • 160gr sugar
  • 80gr butter
  • 50gr coconut flakes
  • 1tsp baking powder
  • 1 big egg
  • 1 tsp vanilla extract
  • pinch of salt

For the frosting:

  • 100gr mascarpone cheese
  • 120gr butter
  • 100gr icing sugar
  • 1 tsp vanilla extract


Preheat the oven at 180° C. In a bowl, mix together the flour, baking powder and a pinch of salt and set aside. Beat the butter, sugar and egg in a large bowl until smooth and creamy. Add the flour mixture to the egg mixture . Stir in the vanilla extract and the milk.  Add the coconut flakes and star until well combined. Pour the mixture in the baking tray and cook for 15-18 minutes.

For the frosting:

Beat together the mascarpone cheese and the butter. Add the icing sugar and the vanilla extract and mix until creamy.
